Ingredients:
- 1 pound ground sausage (pork or deer)
- 1 diced red bell pepper
- 1 peeled and diced sweet potato
- 1 diced zucchini
- 1 can kidney beans (drained and rinsed)
- 1 can chickpeas (drained and rinsed)
- 1 cup diced tomatoes
- 2 T Worcestershire sauce
- 2 T garlic powder
- 2 T onion powder
- 1 cup shredded cheddar
Steps:
- Cut all vegetables into bite-sized pieces. Drain and rinse beans and chickpeas.
- Cook ground sausage with bell peppers and tomatoes. Season with 1 T of garlic powder and 1 T onion powder.
- Drain off any excess grease and add sweet potatoes and chickpeas. Add Worcestershire sauce and cook approximately 10 minutes until potatoes begin to soften.
- Add zucchini and kidney beans and cook an additional 10 minutes.
- Top with shredded cheese and serve!
