  • Ground Sausage and Veggie Skillet

    I crave this dish weekly! Savory, full of flavor, and healthy too–what more could you ask for? Get your cutting knife ready!

    Ingredients:

    • 1 pound ground sausage (pork or deer)
    • 1 diced red bell pepper
    • 1 peeled and diced sweet potato
    • 1 diced zucchini
    • 1 can kidney beans (drained and rinsed)
    • 1 can chickpeas (drained and rinsed)
    • 1 cup diced tomatoes
    • 2 T Worcestershire sauce
    • 2 T garlic powder
    • 2 T onion powder
    • 1 cup shredded cheddar

    Steps:

    1. Cut all vegetables into bite-sized pieces. Drain and rinse beans and chickpeas.
    2. Cook ground sausage with bell peppers and tomatoes. Season with 1 T of garlic powder and 1 T onion powder.
    3. Drain off any excess grease and add sweet potatoes and chickpeas. Add Worcestershire sauce and cook approximately 10 minutes until potatoes begin to soften.
    4. Add zucchini and kidney beans and cook an additional 10 minutes.
    5. Top with shredded cheese and serve!
