  • Mini BBQ Bacon Cheddar Meatloaves

    These mini meatloaves are a hot commodity in my house! Bacon, cheese, barbecue sauce, what else could you ask for?

    I love making these because you get more crispy edges than you would baking a whole loaf. Plus having them already portioned out makes for easy leftovers for lunch!

    Ingredients:

    • 2 pounds ground beef
    • 6 slices of bacon
    • 1 1/2 cups shredded cheddar cheese
    • 2 T your favorite bbq seasoning
    • 1/2 cup bread crumbs
    • 3 T Worcestershire sauce
    • 1 T onion powder
    • 1 T garlic powder
    • 2 eggs
    • 1/2 cup bbq sauce (we use Sweet Baby Ray’s Original)

    Steps:

    1. Cook bacon and set aside to cool. Once cooled, crumble bacon and mix with all other ingredients except bbq sauce
    2. Divide mixture into 6 equal parts. Form into a ball and place on prepared baking sheet. Press the loaves down lightly to make the bottom flat on the pan.
    3. Bake at 425 degrees for 35 minutes. Brush with bbq sauce and broil on low for another 5 minutes to caramelize sauce on top. Let cool for 10 min and enjoy!
