
These mini meatloaves are a hot commodity in my house! Bacon, cheese, barbecue sauce, what else could you ask for?
I love making these because you get more crispy edges than you would baking a whole loaf. Plus having them already portioned out makes for easy leftovers for lunch!
Ingredients:
- 2 pounds ground beef
- 6 slices of bacon
- 1 1/2 cups shredded cheddar cheese
- 2 T your favorite bbq seasoning
- 1/2 cup bread crumbs
- 3 T Worcestershire sauce
- 1 T onion powder
- 1 T garlic powder
- 2 eggs
- 1/2 cup bbq sauce (we use Sweet Baby Ray’s Original)
Steps:
- Cook bacon and set aside to cool. Once cooled, crumble bacon and mix with all other ingredients except bbq sauce
- Divide mixture into 6 equal parts. Form into a ball and place on prepared baking sheet. Press the loaves down lightly to make the bottom flat on the pan.
- Bake at 425 degrees for 35 minutes. Brush with bbq sauce and broil on low for another 5 minutes to caramelize sauce on top. Let cool for 10 min and enjoy!
