
I am NOT someone that has the drive to make breakfast in the mornings before work. If I don’t have something easy to grab as I’m walking out the door, no breakfast for me! This has been one of my favorite breakfast foods recently. You can change up the fruit and other additives and make so many other flavors!
Ingredients:
- 3 cups old fashioned or instant oats
- 3 T light brown sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 2 eggs
- 2 tsp vanilla
- 2 overripe bananas
- 1 cup diced strawberries
Steps:
- In a medium bowl, mash banana until smooth. Combine with other wet ingredients.
- In another bowl, combine dry ingredients and gradually pour into wet mixture.
- Fold in strawberries. Pour into greased baking dish and bake at 350 degrees for 35 min until golden and set in the middle.
*If you have an extra sweet tooth, drizzle with honey or fold in 1 cup chocolate chips!*
