  • Berry Almond Poundcake

    This is an amazing recipe to make in the summer with fresh berries! The almond extract compliments the sweetness of the berries wonderfully and the greek yogurt helps keep it extra moist!

    Ingredients:

    • 1 1/2 cups all purpose flour
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 1/2 cup (1 stick) softened butter
    • 1 cup sugar
    • 2 tsp almond extract
    • 1/2 cup greek yogurt
    • 1/2 cup diced strawberries
    • 1/2 cup blueberries
    • 2 eggs

    Steps:

    1. Cream butter and sugar together until light and fluffy. Add eggs one at a time and beat to combine. Fold in almond extract and yogurt
    2. Combine dry ingredients in a separate bowl and gradually add to the wet mixture. Fold in berries.
    3. Pour batter into a greased loaf pan and bake at 350 degrees for 45 min to an hour, or until cake is cooked through. Don’t forget to do the toothpick test!
