  • Cheesy Beef and Sweet Potato Skillet with Red Peppers

    All of the flavors in this dish go together so well! Tangy, sweet, salt, it’s all there.

    Ingredients:

    • 1 pound ground beef
    • 1 large sweet potato, chopped into bite-sized pieces
    • 1/2 yellow onion, chopped
    • 1 red bell pepper, chopped
    • 1 cup heavy cream
    • 1 cup taco style cheese
    • 1/2 cup sour cream
    • 1 T garlic powder
    • Salt and pepper to taste

    Steps:

    1. Chop veggies and brown with ground beef. Drain any excess grease.
    2. Add seasoning, salt and pepper to your preference, and heavy cream. Simmer until sauce thickens.
    3. Remove from heat and stir in sour cream and cheese.

    *Optional- top with more cheese and broil until bubbly*
