  • Corn and Black Bean Salsa

    I could eat a whole bowl of this by myself! It’s actually a recipe from Weight Watchers, but I associate it with hot days in the summer when you need a bite of something cool and refreshing! My mom always made this when we went to the lake during summer break. Even my pickiest friends enjoyed it!

    Ingredients:

    • 1 can black beans, drained and rinsed
    • 1 can corn, drained
    • 1 diced green bell pepper
    • 1/2 cup chopped red onion
    • 1/2 cup salsa from jar
    • 2 T lemon juice
    • 1 tsp cumin
    • 1 clove minced garlic
    • 1/4 tsp salt

    Steps:

    1. Combine all ingredients and serve! It’s just that easy!
