
A dish that is perfect for spring or summer! The brightness of the lemon combined with the creaminess of the alfredo-like sauce is pure perfection!
Ingredients:
- 3-4 chicken breasts, cut into bite sized pieces
- 1 lemon, juice and zest
- 1 cup heavy cream
- 1/2 cup milk
- 4 oz goat cheese
- Pasta of your choice
- 1/2 cup chicken broth
- 3 T butter
- 2 T minced garlic
- 2 T italian seasoning
- Salt and pepper to taste
Steps:
- Season chicken with italian seasoning, salt, and pepper. Cook fully and set aside.
- In saucepan, add cream, milk, broth, seasonings, and garlic. Salt and pepper to your preference. Reduce over med heat until sauce thickens. Cook pasta while sauce reduces.
- Once pasta is finished and sauce has thickened, combine pasta, sauce, chicken, lemon juice and zest, and stir in cheese until melted together.
- Top with parmesan and serve!
