  • Creamy Lemon Pasta with Chicken

    A dish that is perfect for spring or summer! The brightness of the lemon combined with the creaminess of the alfredo-like sauce is pure perfection!

    Ingredients:

    • 3-4 chicken breasts, cut into bite sized pieces
    • 1 lemon, juice and zest
    • 1 cup heavy cream
    • 1/2 cup milk
    • 4 oz goat cheese
    • Pasta of your choice
    • 1/2 cup chicken broth
    • 3 T butter
    • 2 T minced garlic
    • 2 T italian seasoning
    • Salt and pepper to taste

    Steps:

    1. Season chicken with italian seasoning, salt, and pepper. Cook fully and set aside.
    2. In saucepan, add cream, milk, broth, seasonings, and garlic. Salt and pepper to your preference. Reduce over med heat until sauce thickens. Cook pasta while sauce reduces.
    3. Once pasta is finished and sauce has thickened, combine pasta, sauce, chicken, lemon juice and zest, and stir in cheese until melted together.
    4. Top with parmesan and serve!
