
My stepmom, Heather, introduced me to this dish! It’s one of my favorite meals to eat in the fall/winter–so warm and cozy on those brutally cold days! My dad has nicknamed this dish “soup goop” because it’s thick!
Ingredients:
- 4-5 chicken breasts, cut into bite sized pieces
- 2 cans cream of chicken soup
- 2 cans cream of celery soup
- 1 T poultry seasoning
- 2 tsp onion powder
- 2 tsp garlic salt
- 24 oz shredded pepper jack cheese
- 2 1/2 cups instant rice
- 1 cup chicken broth
- Salt and pepper to taste
Steps:
- Season chicken and cook fully. Cook rice and set aside.
- Combine all ingredients except cheese and bring to a low boil.
- Gradually add cheese, stirring constantly until incorporated.
- Serve with Ritz or oyster crackers!
