  • Pepper Jack Chicken and Rice

    My stepmom, Heather, introduced me to this dish! It’s one of my favorite meals to eat in the fall/winter–so warm and cozy on those brutally cold days! My dad has nicknamed this dish “soup goop” because it’s thick!

    Ingredients:

    • 4-5 chicken breasts, cut into bite sized pieces
    • 2 cans cream of chicken soup
    • 2 cans cream of celery soup
    • 1 T poultry seasoning
    • 2 tsp onion powder
    • 2 tsp garlic salt
    • 24 oz shredded pepper jack cheese
    • 2 1/2 cups instant rice
    • 1 cup chicken broth
    • Salt and pepper to taste

    Steps:

    1. Season chicken and cook fully. Cook rice and set aside.
    2. Combine all ingredients except cheese and bring to a low boil.
    3. Gradually add cheese, stirring constantly until incorporated.
    4. Serve with Ritz or oyster crackers!
