  • Cauliflower “Fried” Rice

    I absolutely love making stir fry during the week! It’s great left over for lunch the next day too. If you’re looking for a healthier low-carb option, this is the one for you! I finally learned the secret ingredient to getting restaurant style flavor too: a small amount of yellow curry powder!

    Ingredients:

    • 2 bags frozen cauliflower rice
    • 2 T butter
    • Veggies of choice (I like using broccoli and carrots)
    • 2 T teriyaki sauce
    • 2 T soy sauce
    • 1 T garlic powder
    • 1 T onion powder
    • 1 tsp yellow curry powder
    • 2 eggs (or more if you want the extra protein)

    Steps:

    1. Steam cauliflower rice in microwave until completely thawed. Melt butter in bottom of pan.
    2. Add cauliflower rice, veggies, seasonings, soy and teriyaki sauces and cook until veggies are tender. It’s best to NOT stir this too much. This will help the cauliflower rice “fry”
    3. Once veggies are tender, crack the eggs in and stir well. Once eggs are cooked, you’re done!
