
I absolutely love making stir fry during the week! It’s great left over for lunch the next day too. If you’re looking for a healthier low-carb option, this is the one for you! I finally learned the secret ingredient to getting restaurant style flavor too: a small amount of yellow curry powder!
Ingredients:
- 2 bags frozen cauliflower rice
- 2 T butter
- Veggies of choice (I like using broccoli and carrots)
- 2 T teriyaki sauce
- 2 T soy sauce
- 1 T garlic powder
- 1 T onion powder
- 1 tsp yellow curry powder
- 2 eggs (or more if you want the extra protein)
Steps:
- Steam cauliflower rice in microwave until completely thawed. Melt butter in bottom of pan.
- Add cauliflower rice, veggies, seasonings, soy and teriyaki sauces and cook until veggies are tender. It’s best to NOT stir this too much. This will help the cauliflower rice “fry”
- Once veggies are tender, crack the eggs in and stir well. Once eggs are cooked, you’re done!
