
If you’re looking for a healthier alternative to a southern staple, fried squash, try this recipe instead! My mom made this all the time growing up, and now I make it probably once a week!
Ingredients:
- One yellow squash, sliced thinly
- One zucchini, sliced thinly
- 1/4 cup parmesan cheese
- 1/4 cup bread crumbs
- 1/4 cup olive oil
- Salt and pepper
Steps:
- Cut squash and zucchini into 1/4 inch thick rounds.
- Put all ingredients in gallon sized ziploc bag and shake until each piece is fully coated.
- Lay out rounds on a greased baking sheet and bake at 350 until golden brown.
*If you want the squash and zucchini to be crispy like a chip, cut thinner than 1/4 inch!*
