  • Oven Roasted Squash and Zucchini

    If you’re looking for a healthier alternative to a southern staple, fried squash, try this recipe instead! My mom made this all the time growing up, and now I make it probably once a week!

    Ingredients:

    • One yellow squash, sliced thinly
    • One zucchini, sliced thinly
    • 1/4 cup parmesan cheese
    • 1/4 cup bread crumbs
    • 1/4 cup olive oil
    • Salt and pepper

    Steps:

    1. Cut squash and zucchini into 1/4 inch thick rounds.
    2. Put all ingredients in gallon sized ziploc bag and shake until each piece is fully coated.
    3. Lay out rounds on a greased baking sheet and bake at 350 until golden brown.

    *If you want the squash and zucchini to be crispy like a chip, cut thinner than 1/4 inch!*
