
I feel like meatballs are so versatile and nobody ever talks about it! Usually when you hear the word meatballs, you think of Italian food. Think again! These are a Greek twist you should absolutely try! Recipe inspired by Let’s Dish
Ingredients:
- 2 pounds ground turkey or very lean beef
- 4 oz crumbled feta cheese
- 1 cup chopped fresh spinach
- 2 eggs
- 1/2 cup breadcrumbs
- 1 T onion powder
- 1 tsp oregano
- 1/2 tsp cumin
- 5 oz plain greek yogurt
- 1 T lemon juice
- 1 tsp dill
- Salt and pepper to taste
Steps:
- Preheat oven to 450 degrees and prepare a 9×13 baking dish.
- In a large bowl, combine all ingredients except yogurt, lemon juice, and dill. Roll into golf ball sized meatballs and place in dish side by side.
- Bake for 25-30 minutes or until meatballs are browned and cooked through.
- For the sauce, mix together yogurt, lemon juice, and dill. Add a splash of water if too thick.
