  • Greek Spinach Feta Meatballs with Lemon Yogurt Sauce

    I feel like meatballs are so versatile and nobody ever talks about it! Usually when you hear the word meatballs, you think of Italian food. Think again! These are a Greek twist you should absolutely try! Recipe inspired by Let’s Dish

    Ingredients:

    • 2 pounds ground turkey or very lean beef
    • 4 oz crumbled feta cheese
    • 1 cup chopped fresh spinach
    • 2 eggs
    • 1/2 cup breadcrumbs
    • 1 T onion powder
    • 1 tsp oregano
    • 1/2 tsp cumin
    • 5 oz plain greek yogurt
    • 1 T lemon juice
    • 1 tsp dill
    • Salt and pepper to taste

    Steps:

    1. Preheat oven to 450 degrees and prepare a 9×13 baking dish.
    2. In a large bowl, combine all ingredients except yogurt, lemon juice, and dill. Roll into golf ball sized meatballs and place in dish side by side.
    3. Bake for 25-30 minutes or until meatballs are browned and cooked through.
    4. For the sauce, mix together yogurt, lemon juice, and dill. Add a splash of water if too thick.
