
I haven’t made this recipe in a few years, but just thinking about it makes my mouth water! The sourness of the sourdough starter complements the lemon beautifully. Recipe inspired by Hearts Content Farmhouse!
Ingredients:
- 1/2 cup melted butter or vegetable oil
- 3/4 cup sugar
- 2 eggs
- 1 1/2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- Zest and juice of 1 lemon
- 1/2 cup sourdough starter discard
- 3/4 cup milk
- 1/2 cup powdered sugar
- 2 tsp fresh lemon zest for glaze
- 2 tsp fresh lemon juice for glaze
Steps:
- Preheat oven to 350 degrees and prepare a loaf pan.
- Combine oil or butter with eggs and sugar in a large bowl. Mix until well combined.
- Mix the flour, baking powder, sugar, and salt in a separate bowl. Mix until just combined. Stir in wet ingredients with the starter discard and milk.
- Pour into loaf pan and bake for 50-60 minutes or until it passes toothpick test.
- For the glaze, mix together powdered sugar and 2 tsp juice and zest and pour onto cake after it has cooled for 15 min on a cooling rack.
