  • Lemon Sourdough Cake

    I haven’t made this recipe in a few years, but just thinking about it makes my mouth water! The sourness of the sourdough starter complements the lemon beautifully. Recipe inspired by Hearts Content Farmhouse!

    Ingredients:

    • 1/2 cup melted butter or vegetable oil
    • 3/4 cup sugar
    • 2 eggs
    • 1 1/2 cups all purpose flour
    • 1 1/2 tsp baking powder
    • 1/2 tsp salt
    • Zest and juice of 1 lemon
    • 1/2 cup sourdough starter discard
    • 3/4 cup milk
    • 1/2 cup powdered sugar
    • 2 tsp fresh lemon zest for glaze
    • 2 tsp fresh lemon juice for glaze

    Steps:

    1. Preheat oven to 350 degrees and prepare a loaf pan.
    2. Combine oil or butter with eggs and sugar in a large bowl. Mix until well combined.
    3. Mix the flour, baking powder, sugar, and salt in a separate bowl. Mix until just combined. Stir in wet ingredients with the starter discard and milk.
    4. Pour into loaf pan and bake for 50-60 minutes or until it passes toothpick test.
    5. For the glaze, mix together powdered sugar and 2 tsp juice and zest and pour onto cake after it has cooled for 15 min on a cooling rack.
