
Ever buy bananas and then watch them turn brown and spotty before you even make time to enjoy them? Yep, me too! Banana bread is the perfect place to use those extra-ripe bananas! The more ripe the bananas, the sweeter your banana bread will be! And if you have an ultra sweet tooth, add chocolate chips or try my streusel topping! I like using both almond and vanilla extract together for more aromatic flavor.
Ingredients:
- 3-4 ripe bananas
- 1/3 cup melted butter
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 1/2 cups all purpose flour
- 1 tsp vanilla
- 1 tsp almond extract
- 1 egg
Streusel topping:
- 4 T softened butter
- 1/2 cup all purpose flour
- 1/3 cup sugar
Steps:
- Mash bananas and melted butter together. Add sugar, egg, and extracts. Stir until well combined.
- Sprinkle in baking soda, baking powder, cinnamon, and salt and stir well.
- Add flour and fold in until just combined. Pour into a prepared loaf pan.
- For the topping, mix all ingredients until crumbly. Disperse evenly onto top of batter.
- Bake for 50-60 minutes at 350 degrees or until it passes toothpick test!
- Let cool in pan for 15 min before transferring to cooling rack.
