  • Lemon Artichoke Pesto

    I absolutely love pesto, so when I saw Lemon Artichoke Pesto at the store, I knew I had to have it. Of course, when I went back, I couldn’t find any more! Thankfully, The View from Great Island has a similar recipe!

    Ingredients:

    • 15 oz can artichoke hearts, drained
    • 2 cloves minced garlic
    • Zest of 1 lemon
    • 2 T lemon juice
    • 1/2 cup asiago cheese, finely grated
    • 1/4 cup olive oil
    • Handful of fresh basil
    • Salt and pepper to taste

    Steps:

    • Put artichokes in food processor and pulse a few times.
    • Add garlic, lemon zest and juice, cheese, basil, oil, and salt and pepper
    • Pulse 20-30 times to combine ingredients while still maintaining some texture. If you want it to be smoother, pulse longer.
