
I absolutely love pesto, so when I saw Lemon Artichoke Pesto at the store, I knew I had to have it. Of course, when I went back, I couldn’t find any more! Thankfully, The View from Great Island has a similar recipe!
Ingredients:
- 15 oz can artichoke hearts, drained
- 2 cloves minced garlic
- Zest of 1 lemon
- 2 T lemon juice
- 1/2 cup asiago cheese, finely grated
- 1/4 cup olive oil
- Handful of fresh basil
- Salt and pepper to taste
Steps:
- Put artichokes in food processor and pulse a few times.
- Add garlic, lemon zest and juice, cheese, basil, oil, and salt and pepper
- Pulse 20-30 times to combine ingredients while still maintaining some texture. If you want it to be smoother, pulse longer.
