  • Mexican Cornbread

    My grandmother makes this, my mom makes this, I make this, and EVERYONE loves it! It’s always moist and you can adjust the spice level you’d like! This recipe makes A LOT, so if you’re just cooking for a few people, you may want to divide this recipe in half!

    Ingredients:

    • 3 cups self rising cornmeal
    • 3 T sugar
    • 1 tsp salt
    • 1 1/2 cups shredded cheddar
    • 1 chopped onion
    • 1 cup vegetable oil
    • 1 1/2 cups milk
    • 3 eggs
    • 1 15oz can creamed corn
    • 1 whole jalapeno, chopped small (or pickled jalapenos)

    Steps:

    1. Mix all ingredients together and in a 9×13 baking dish at 450 degrees for 20-30 min or until golden brown and cooked through.
