  • Chicken in Tomato Basil Cream Sauce

    We love anything creamy in my household. I know, heavy cream is definitely not the healthiest option, but it sure does amplify just about any dish! I found this recipe from The Blond Cook and knew I had to try it, especially because I have fresh tomatoes and basil in the garden!

    Ingredients:

    • 2 chicken breasts, sliced in half lengthwise
    • 1T olive oil
    • 1T minced garlic
    • 1 cup heavy cream
    • 3/4 cup diced tomatoes (fresh or canned)
    • 3/4 cup grated parmesan cheese
    • 1/4 tsp Italian seasoning
    • 1/2 cup chopped fresh basil
    • Salt and pepper to taste

    Steps:

    1. Season chicken breasts with salt and pepper. Cook in olive oil until cooked through. Remove from pan and set aside.
    2. Add garlic to pan and cook for about 30 seconds, stirring constantly.
    3. Add heavy cream, tomatoes, cheese, and Italian seasoning. Stir to combine.
    4. Bring to a boil then reduce heat and simmer for 4-5 min or until sauce starts to thicken.
    5. Remove from heat and stir in fresh basil. Salt and pepper to your liking. Return chicken to skillet and serve!
