
We love anything creamy in my household. I know, heavy cream is definitely not the healthiest option, but it sure does amplify just about any dish! I found this recipe from The Blond Cook and knew I had to try it, especially because I have fresh tomatoes and basil in the garden!
Ingredients:
- 2 chicken breasts, sliced in half lengthwise
- 1T olive oil
- 1T minced garlic
- 1 cup heavy cream
- 3/4 cup diced tomatoes (fresh or canned)
- 3/4 cup grated parmesan cheese
- 1/4 tsp Italian seasoning
- 1/2 cup chopped fresh basil
- Salt and pepper to taste
Steps:
- Season chicken breasts with salt and pepper. Cook in olive oil until cooked through. Remove from pan and set aside.
- Add garlic to pan and cook for about 30 seconds, stirring constantly.
- Add heavy cream, tomatoes, cheese, and Italian seasoning. Stir to combine.
- Bring to a boil then reduce heat and simmer for 4-5 min or until sauce starts to thicken.
- Remove from heat and stir in fresh basil. Salt and pepper to your liking. Return chicken to skillet and serve!
