  • Jalapeño Popper Chicken

    I made this the other night and it was sooo good! I was thinking about the leftovers all day the next day!

    Ingredients:

    • 4 chicken breasts
    • 1 block cream cheese
    • 1 cup shredded cheddar
    • 3-4 chopped jalapeños, seeds removed
    • 4 slices pepper jack
    • Seasonings of choice

    Steps:

    1. Cut chicken breasts almost all the way through horizontally to create a pocket.
    2. Mix together cream cheese, shredded cheddar, and jalapeños.
    3. Stuff chicken breasts with cream cheese mixture.
    4. Season chicken breasts and place on baking sheet. Top with piece of pepper jack.
    5. Bake at 375 degrees for 30 min or until cooked through.
