  • Pesto Chicken Pasta

My mom has been raving about how much she enjoys making pesto chicken pasta, so of course I have to share the recipe! My mom uses mozzarella on her recipe, but it would be good with parmesan, asiago, goat cheese, or feta. I think pretty much any cheese could work!

    Ingredients:

    • 3-4 chicken breasts
    • Pasta of choice
    • Jar of pesto
    • Mozzarella cheese
    • 1 T onion powder
    • 1 T garlic powder
    • Cherry tomatoes
    • Salt and pepper

    Steps:

    1. Season chicken with garlic powder, onion powder, salt, and pepper.
    2. Slather pesto on both sides of chicken breasts and add to skillet on medium heat.
    3. Add tomatoes to pan with chicken. Cook until chicken is cooked through.
    4. Boil pasta while chicken is cooking!
    5. Once chicken is finished, top with cheese and cover until cheese has melted.
    6. Serve over pasta and enjoy!
