  • Sourdough Pizza Crust

If you’re someone that does sourdough, you know just how quickly discard can build up! I hate trashing it when I can use it for other things like this pizza crust recipe from Little Spoon Farm.

    Ingredients:

    • 100g sourdough discard
    • 2 tsp fine sea salt
    • 2T olive oil
    • 50g whole wheat flour
    • 450g all purpose flour
    • 350g water

    Steps:

    1. Add all ingredients to a large bowl and use your hands to mix until dough comes together. Cover and rest at room temp overnight.
    2. The next morning, perform one set of stretch and folds. Cover bowl and place in fridge until ready to use.
    3. When ready to use, remove dough from fridge and let come to room temp on counter (about 30 min).
    4. Remove dough from bowl and divide into 4 pieces. Cover and rest for 30 min.
    5. Roll out dough to desired thickness and set aside.
    6. Put oven on broil and heat a cast iron skillet. Once skillet is hot, place dough inside and cook on stovetop for just a few minutes until the bottom of the dough browns.
    7. Add sauce and toppings and broil in oven for 4-5 minutes until cheese has melted.
    8. Slice and serve!
