  • Chicken Bacon Ranch Potatoes

    This hearty meal is perfect any time of the year! You can even do it in the crock pot if you’d like! The combination of chicken, bacon, ranch, and cheese is perfect on top of the roasted potatoes.

    Ingredients:

    • 3 russet potatoes, cubed
    • 6 pieces bacon, cooked and diced
    • 2-3 chicken breasts, cubed
    • 1 cup cheddar cheese
    • 1 packet ranch seasoning
    • 1/4 cup heavy cream
    • Salt and pepper

    Steps:

    1. Cook bacon and set aside.
    2. In a greased casserole dish, put potatoes and half the pack of ranch seasoning. Bake at 400 degrees for 20 min.
    3. After 20 min, add in chicken, heavy cream, and remaining ranch seasoning and stir to combine. Return to oven for another 20 min or until potatoes are tender and chicken is cooked through.
    4. Top with shredded cheese and bacon and broil until cheese is melted.
    5. Top with sour cream and/or green onions (optional) and serve!
