  • Strawberry Sourdough Loaf Cake with Cheesecake Filling

    I’ve been doing a TON of baking recently to try to use up my sourdough discard. It feels like such a waste to just toss it! This loaf cake came out so moist and flavorful!

    Ingredients:

    • 1 1/4 cups all purpose flour
    • 3/4 cup sugar
    • 1/2 tsp salt
    • 2 tsp baking powder
    • 1 tsp baking soda
    • 1/2 cup melted butter
    • 1/2 cup milk
    • 1 large egg
    • 1/4 cup sourdough discard
    • 1 1/4 cup strawberries (or more depending on your taste)
    • 6 oz softened cream cheese
    • 1/2 cup sugar
    • 1 egg yolk

    Steps:

    1. In a large bowl, whisk together dry ingredients.
    2. Add in wet ingredients and combine well. Fold in strawberries.
    3. Grease a loaf pan and pour half the batter into the pan, spreading out evenly.
    4. Mix together cream cheese, sugar, and egg. Add on top of the batter in pan.
    5. Top with remaining batter and spread evenly to cover cream cheese mixture. Sprinkle top with sugar and bake at 375 degrees for one hour or until set and golden brown.
