
The garden is already thriving this year! We picked our first zucchini and the swiss chard has been asking to be used for a month now, so here is what I did with it!
Ingredients:
- 2 T butter
- 2 cups swiss chard (or whatever leafy green you have on hand)
- 3 diced zucchini
- 1/4 cup feta cheese
- 1/4 cup parmesan
- 1/2 cup panko breadcrumbs
- 1/2 small yellow onion
- 2 eggs
- 2 tsp garlic powder
- 3-4 fresh basil leaves, diced thin
Steps:
- Melt butter in a pan, then cook zucchini, swiss chard, and onion until greens are wilted and zucchini is soft.
- Add to a mixing bowl with the remaining ingredients and mix to combine
- Pour into a greased casserole dish and bake at 400 degrees for 30-40 min or until golden brown.
