  • Zucchini Feta Casserole

    The garden is already thriving this year! We picked our first zucchini and the swiss chard has been asking to be used for a month now, so here is what I did with it!

    Ingredients:

    • 2 T butter
    • 2 cups swiss chard (or whatever leafy green you have on hand)
    • 3 diced zucchini
    • 1/4 cup feta cheese
    • 1/4 cup parmesan
    • 1/2 cup panko breadcrumbs
    • 1/2 small yellow onion
    • 2 eggs
    • 2 tsp garlic powder
    • 3-4 fresh basil leaves, diced thin

    Steps:

    1. Melt butter in a pan, then cook zucchini, swiss chard, and onion until greens are wilted and zucchini is soft.
    2. Add to a mixing bowl with the remaining ingredients and mix to combine
    3. Pour into a greased casserole dish and bake at 400 degrees for 30-40 min or until golden brown.
